3 cups cashews soaked for at least 4 hours

juice of 1 lemon

1/2 tsp. salt

15 billion microorganisms probiotics 

Directions

Soak Cashews for 4 hours. Drain and rinse, then blend in Vita Mix with lemon and salt until smooth and creamy. Add a little water if necessary to help blend it. Transfer to a glass bowl and stir the probiotics in by hand. Allow cream cheese to sit at room temperature for 12-24 hours (depending on how tart you like it) and then refrigerate. Easy Cream Cheese will not be as thick as the pressed cream cheese, but will work well for most recipes.
