This nutrient dense gluten free breakfast casserole is a fantastic way to start your day. It can be made ahead of time so you can have a satisfying healthy quick meal on the go. Ingredients description


3 cups pre cooked millet

½ cup raisins

1 cup unsweetened applesauce

5 large apples, sliced, but not peeled



1 can coconut milk 

3/4 cup water

1/2 cup chia seeds  

2 Tbs. arrowroot powder (or cornstarch)  

1 tsp nutmeg 

¾ tsp. salt 

2 tsp. cinnamon 

2 tsp. allspice

2 Tbs. vanilla 

1/3 cup raw honey 


Crumble Topping

1/4 cup honey 

¼ cup coconut oil

1 Tbs fresh lemon juice 

3 Tbs. orange zest 

2 Tbs. lemon zest 

1 tsp. cinnamon 

1/2 tsp. nutmeg

½ tsp. powdered ginger

½ tsp. salt 

1/2 cup almond flour (optional)  

1 1/2 cup rolled oats 

1/4 cup unsweetened shredded coconut (optional) 

1/2 cup chopped pecans


Grease a 9x13 glass baking dish, and preheat the oven to 325 degrees Fahrenheit.  


Mix millet, raisins, and applesauce together in a medium size bowl.  Set millet mixture aside.  In another mixing bowl, combine pudding ingredients together.  In a third mixing bowl, combine the crumble topping ingredients.  


Pour the millet mixture into the greased baking dish and smooth into an even layer.  Carefully spread the pudding mixture on top of the millet and then add a layer of sliced apples on top of the pudding layer.  Finally, spread the crumble topping evenly over the sliced apples.  


Bake at 325 degrees for 30 minutes, or until the top is golden brown and the pudding is hot and bubbly. Remove from oven; allow to cool for 10 minutes before serving.  Top with coconut whipped cream if desired.

Dear Janae, I am new to your website. I am planning to try Apple Millet Breakfast Bake. However, the recipe description does not appear to match your video. Perhaps I misunderstood. In the video you state that the base is millet,applesauce and raisins. In the recipe ingredients you say millet,sliced apples and raisins. Would you please clarify this for me. Perhaps there are other corrections as well. Thank you, Gale.

A lot of differences from the video....but I tried it, hoping for the same results as seen on the success. It turned out soupy and not so good. So far no one in my family will eat more than 3 bites.....I will next try to study the video and guess measurements and such. But if a corrected recipe is posted before then I will be very happy :)

Sorry for the problems with the recipe. Sometimes there are errors during data transfer to the website. I have gone back and corrected the recipe above so it works like a charm now. My apologies to those who tried to make it without an accurate recipe. Janae Devika.
