Start your day with gingerbread and coconut whipped cream! This breakfast gingerbread is made with whole grains, whole foods, and a variety of spices for a delicious and warm way to start your day. Ingredients description

½ cup steel cut oats                       

¾  cup water

1 cup coconut milk

2 Tbs. apple cider vinegar

2 cups whole wheat flour


1 ½  teaspoon baking soda

1 ½ tsp. baking powder

1 tsp. salt

4 tsp. ground ginger

2 tsp. cinnamon

½ tsp. cloves

1 tsp. nutmeg

1/4 honey

1/2 cup coconut oil, melted

3/4 cup molasses

2 large egg


1/2 cup diced, crystalized ginger (optional)



Combine the water, apple cider vinegar, flour, and steel cut oats in a glass bowl.  Cover and let sit at room temperature overnight.  In the morning, mix in the remaining ingredients.  Pour into a 9x13 inch baking dish or 2 loaf pans lined with parchment paper.  Bake at 350 for 30-35 minutes, until toothpick comes out clean.  Cool for 15 minutes before cutting into bars.  Serve with coconut whipped cream.

Can you please let us know the nutritional value of each bar? like how much protein & fibre & sugar would I get?
