Ingredients description

1 cup cashews, soaked for at least 4 hours

juice of 1 lemon

1/2 tsp. salt

1/4 tsp. probiotic culture

Directions

Soak cashews for 4 hours. Drain and rinse, then blend in Vita Mix with lemon and salt until smooth and creamy. Add a little water if necessary to help blend it. Transfer sour cream to a glass bowl and stir the probiotics in by hand. Let sour cream sit at room temperature for 12-24 hours (depending on how tart you like it) and then refrigerate.
