Ingredients description

4 cups walnuts

1 1/2 cups hemp seed

5 cup zucchini

1/2 cup grated carrot

10 cloves garlic (or more to taste)

1/3 cup nutritional yeast

1 Tbs. salt (or more to taste)

2 tsp. powdered rosemary

1 cup ground chia seed

1 tsp. black pepper


Soak walnuts for at least 4 hours. Rinse and drain. Put walnuts in food processor and chop until they become the consistency of coarse flour. Do not make a paste out of them. Pour walnut flour into a separate bowl and add zucchini, carrot, garlic, nutritional yeast, rosemary and black pepper into the food processor. Blend until smooth. Add to the bowl of walnut flour. Grind chia seeds in a spice mill or blender. Add to walnut mixture. Mix with heavy spoon or hands to make a smooth batter. Spread into a smooth 1/4 inch layer on Teflex sheets or parchment paper. Use a pizza cutter or butter knife to score batter into cracker sized shapes. Dehydrate at 110 degrees until crackers are dry to the touch. Flip over, onto a screen, peel off parchment or Teflex layer, and continue drying until crackers are dry and crisp. Store in airtight container in the refrigerator.
