Ingredients description

Fajita Meef

1 24 oz. package portabella mushrooms


1 lime, juiced

2 Tbs. Olive Oil

6 cloves Garlic, crushed

4 Tbs. Tamari

1 tsp. smoked paprika

1/2 tsp. black pepper

1 tsp. cumin

2 tsp. chili powder

1 Tbs. honey

2 tsp. onion powder



Tortilla or Lettuce Cup

Fajita Meef

1 sweet onion, caramelized

1 Red Bell Pepper, sliced thin

1 Green Bell Pepper, sliced thin

Sour Cream (see sour cream recipe)

Guacamole (see guacamole recipe in cookbook)

Pico de Gallo (see Pico de Gallo recipe)


To caramelize onion, slice onion into rings, add 1 Tbs. coconut oil to a skillet and then add onions. Cook over medium low heat for 20 minutes, stirring occasionally, until onions are brown and caramelized.


Clean and slice mushrooms. Mix remaining marinade ingredients together. Place mushrooms in skillet over medium heat. Sauté Mushrooms until they release their water and then water evaporates. Add marinade into the pan and turn heat down to low. Simmer for another 10 minutes until marinade has thickened. Remove mushrooms from pan onto serving platter. Leave 1/4 cup marinade in the pan. Add sliced peppers to pan and cook over medium heat for 3-5 minutes, until peppers are well coated and warm. Add Peppers to serving platter with onions and Meef.

Serve fajitas buffet style with tortillas (or lettuce leaf wraps), Meef, onions, peppers, salsa, guacamole and sour cream.
