These fresh spring rolls are full of healthy vegetables, mint, basil and then dipped in Janae's famous Thai Peanut Sauce. Sprinkle with sesame seeds for an elegant touch! You'll find this recipe and other great recipes in the Healthy Asian Inspired Cuisine cookbook.

Ingredients description

Peanut Sauce

1/2 cup organic peanut butter

3 Tbs. fresh grated ginger

2 Tbs. Tamari

4 Tbs. raw apple cider vinegar

2 Tbs. honey

3 cloves garlic

1 tsp. toasted sesame oil

pinch cayenne pepper

Mix all ingredients in a blender or by hand until well combined.


Spring Rolls

2 cups bean sprouts

1 red pepper

1 cucumber

1 cup finely shredded cabbage

1/3 cup grated carrot

1/4 cup sliced green onion

1/4 cup sesame seeds, toasted

1 bunch cilantro

1 bunch mint           

1 bunch basil

1 pack thick rice paper wrappers



Finely shred cabbage, grate or julienne carrot and red pepper, and cucumber, slice green onion lengthwise. Wash mint, cilantro, and basil and remove leaves from stem. Place all ingredients in separate piles and arrange so they are all within easy reach.  


Fill a shallow pan with hot water. Put sushi rolling bamboo mat in front of you situated horizontally for easy access.


Dip rice paper wrapper in hot water for 10-30 seconds, until pliable but not soggy. Carefully lay rice wrapper flat on bamboo mat, avoiding wrinkles. On the lower 1/3 of rice paper wrapper, layer a little of each vegetable and herb in a pile, leaving a little room on the sides to fold rice paper over. Using bamboo mat, start to roll the wrapper away from you. Roll as tightly as possible. When there is 1 inch of wrapper left at the top of the roll, fold the sides in snugly and then finish rolling. Place on a serving plate without touching the spring rolls (they will stick together). Serve with peanut dipping sauce.
